1 Chicken: 4 Meals

ROAST-CHICKENI like eating chicken. I can eat it 3 times a day 7 days a week. But I don’t because eating this much chicken is one-unhealthy and two-expensive. Even though I wouldn’t eat chicken for every meal, I certainly was looking for ways by which I can eat a hell of a lot more of chicken without getting the cost high (it’s the starting of the article and I have already used the word chicken 4 times…I love Chicken, LOL). As you all well know I am a huge fan of coupons, saving money and UK free stuff sites, and chicken is so expensive now, spreading it across 4 meals is a great saving tips.

So as I said I was trying to find ways by which I can make the most of the chicken I buy and I was able to stretch it out to 4 meals. That is 4 meals per chicken.

First, when you buy a chicken buy it whole it is cheaper this way instead of when you buy just the breast fillets or legs or thighs. I buy from ABC chickens because in my experience their chickens taste better from others, they are relatively bigger in size and they are relatively cheaper also.

Now here is how I made a single chicken last for 4 days. Even though you might find many other recipes on the internet, I found these ones the tastiest.

Before starting on our journey to 4 meals from one chicken we need to prepare the chicken so that our next steps become much easier. Alright here we go; firstly, we need to keep our meat moist so it will be easier to strip off from the bones to do that cook your chicken in a large crock pot or in a slow cooker.

Once all the meat has been removed divide it into 4 piles in proportions needed for the recipes mentioned below. Store the remaining juices in the pan because you are going to need it in two of the recipes mentioned below. I am going to call it “Chicken Juice” in the rest of the article for easy reference.

Chicken Curry

On the first day I made Chicken Curry. It is a delicious dish that the whole family can enjoy. It is quick and easy to make.

Ingredients:

  • Pataks korma paste
  • Coconut milk—– 1 Tin
  • Peppers———– 2
  • Peas—————- Just a handful
  • Carrots———– 2
  • Chicken———-1 portion
  • Dollop of Double Cream—-optional
  • Rice————Basmati
  • Breads———-Optional

Method:

  1. Firstly, Stir fry your peppers, peas and carrots until tender, then add in chicken and korma paste
  2. Secondly, add coconut milk and cream, then transfer to a casserole dish and cook in oven gas mark 5 for about 45 mins.
  3. Third, follow instructions when cooking basmati rice. When done serve with the curry. If you have bread or naans serve them also.

Chicken Risotto

On the second day, use the 2nd portion of the chicken to make risotto. It is also easy and delicious.
Ingredients:

  • Onion 1
  • garlic cloves 2
  • Chicken 1 portion
  • Chopped Peppers 2
  • White wine (not essential)
  • chopped mushrooms 100g
  • Arborio rice 225g
  • frozen peas a handful
  • the chicken juice pint and a half
  • Parmesan Cheese a large handful

Method:

  1. Pour some olive oil and fry onion and garlic.
  2. Add the mushrooms and the peppers and fry for a few more minutes. Also add some white wine (optional).
  3. Add the rice and the stored chicken juice from the pan. Gradually keep adding all of the rice and chicken juice until you have use all of it.
  4. Add the handful of frozen peas and cheese and mix.
  5. Serve in a nice dish.

Note: if the final risotto is too hard just add some water and a veggie stock cube until it is in the needed texture.

Chicken Broth with fresh bread

On the third day you can make chicken broth served with some fresh bread. It is a mix between stew and soup. It is very delicious none the less.
Ingredients:

  • Chicken juice 1 portion
  • chicken 1 portion (the smallest)
  • soup mix 1 packet
  • Carrots 2
  • Leek 1
  • Onion 1
  • Swede 1

Method:

  1. Leave your soup mix in Chicken juice overnight. Next morning put it on boil.
  2. add the chopped carrots, onion, leek and swede in the mix.
  3. let it cook for about 2-3 hours, add water if you like thinner soup. Also add seasoning.
  4. serve with fresh breads and butter.

Chicken Fritatta

On the final day, we will be making Chicken Fritatta. Just as the previous recipes this one is also easy to make and delicious to eat.

Ingredients:

  • potatoes 2-4
  • eggs 4
  • milk 1 tablespoon
  • onion 1
  • garlic 2 cloves
  • cheese grated
  • chicken 1 portion
  • Assorted filling mushrooms, peas, tomatoes, broccoli or whatever you have

Method:

  1. slice the potatoes after boiling them..
  2. put the garlic and onion in a pan and fry them until they are soft.
  3. add the sliced potatoes and any other fillings you have to the pan and keep frying.
  4. beat the eggs and add them with milk. Add this mixture to the frying pan. Keep cooking until the sides are set but the middle is soft.
  5. Place under a grill and sprinkle some cheese on top. Cook until the top is brown in color.
